Dense mound of small dark green leaves with more robust flavor and fragrance. Revered by ancient Greeks as a gentle, calming herb. Oregano is easy to grow and sure tastes great with Greek food. It enhances cheese and egg dishes such as omelets, frittata, quiches, and flans. It can be added to yeast breads, marinated veggies, roast peppers, mushrooms, roast and stewed beef, pork, poultry, game, onions, black beans, zucchini, potatoes, eggplant, and shellfish. The herb can be used fresh or dried. When it is dried the flavor becomes more pungent and aggressive.
